Blintzes with cheese are a great treat for breakfast or brunch. A sweet and creamy cheese filling is put inside these thin crepes, which are then lightly fried until they are just right. For a really sweet treat, put some sour cream, powdered sugar, and fresh berries on top of them.
Ingredients: 4 large eggs. 1 cup all-purpose flour. 1 1/4 cups milk. 1/4 cup water. 1/4 teaspoon salt. 2 tablespoons unsalted butter, melted. 1 cup ricotta cheese. 1/4 cup cream cheese. 1/4 cup granulated sugar. 1 teaspoon vanilla extract. Zest of 1 lemon. 1/4 cup sour cream. Powdered sugar for dusting. Fresh berries for garnish optional.
Instructions: Put the eggs, flour, milk, water, salt, and melted butter in a blender. Mix until it's smooth. 30-minute break for the batter. The ricotta cheese, cream cheese, sugar, vanilla extract, and lemon zest should all be mixed together well in a medium-sized bowl. Put away. Put a nonstick skillet on medium heat and use butter or oil to lightly coat it. Put a little batter into the pan and swirl it around to make a thin pancake that looks like a crepe. For one to two minutes, or until the edges begin to lift, cook. Turn over and cook for one to two more minutes. Stack the crepes on a plate and repeat with the rest of the batter. To put it together, put a crepe on a clean surface and add a large tablespoon of the cheese mixture to the middle of it. Like a burrito, fold the sides in and roll it up. Do it again with the rest of the filling and crepes. Put the pan on medium-high heat and add the butter. Spread the blintzes out in the pan with the seam side down. Cook for two to three minutes on each side, until both sides are golden brown. Place the cheese blintzes on a plate and top them with sour cream and powdered sugar. If you want, you can decorate with fresh berries. Enjoy your tasty cheese blintzes that you made yourself!
