I have long meant to dive deeper in to this chart. When I did my first cupping, this was on the table for guests and it helped me quite a bit. If you genuinely want to develop your palette, print this or have it handy next time you try that super spendy, single origin with your morning noms. ;)

Tea ‘Flavor Wheel’
I’ve been drinking tea for years, though I am still relatively new to the hobby. One aspect of tea that I’ve been particularly interested in is the ways that vendors and reviewers describe flavors in tasting notes.
What we typically read in tasting notes are not flavors, but aromas. Interestingly, unlike flavors, there is still no consensus on how to best categorize aroma. While some researchers use a seven category system, others have suggested that there are actually ten primary odors. Much more so than taste, aromas are dependent on the past experiences of the individual “taster.” (Mei Leaf actually has a nice YouTube video on this topic.) Still, tasting notes are ubiquitous (excepting W2T) and are one of only a few tools consumers have to decide which teas to buy. Consequently, it is rather important to know what vendors mean when they describe teas as having specific “flavors.”
This is not just an issue for tea drinkers, but comes up a lot among wine, beer, and coffee drinkers too. In those communities, there are already established lexicons of “flavor” descriptors which help standardize tasting notes. Those descriptors are often visualized as a “flavor wheel,” of which there are many. There are currently a few flavor wheels for tea drinkers too. The International Tea Masters Association (ITMA) has an aroma wheel, Twinings has a flavor wheel, and the Specialty Coffee Association of America (SCAA) recently had one specially made for coffee. To my knowledge though, the tea-specific flavor wheels are ad hoc and not based on systematic study of tea aromas.
As an academic and hobbyist, I was frustrated by the lack of systematic research on tea aromas and flavors. So I made this Tea Flavor Chart (Excel).
I’ve been using this chart for a couple weeks and it’s worked pretty well. Having a standardized lexicon to describe tea flavors lets me more easily compare teas and decide what I like. I also enjoy seeing “all” of the flavors we typically describe in teas all in one – easily accessible – location. This is my first time sharing the chart online, so hopefully now others can start to build on it.
Here is how I did it:
Using Steepster, I identified the top 50 unflavored teas, sorted by average user rating as of June 2017. I only included unflavored, loose-leaf teas with at least 5 flavor descriptors from user reviews. The top rated teas favored black and puerh teas, so I decided to add 20 teas from within only the green, white, and oolong categories. (This type of stratified, random sample is fairly common.) The Steepster ratings of teas in the sample ranged between 90 and 87, with an average of 88. The final sample included 15 green and white teas (21%), 15 oolong teas (21%), 24 black teas (34%), and 16 puerh teas (23%).
From this sample of 70 teas, I collected 187 flavor descriptors. A number of descriptors (11%) applied to all four styles of tea, while 24% applied to three styles, 30% to two styles, and 35% applied to only one style. Black teas had the most descriptors (125), followed by oolongs (103), puerhs (96), and greens and whites (73). There is a relatively high “association” between black and oolong descriptors (40% co-occurrence), black and puerh descriptors (35%), and oolong and puerh descriptors (32%). Unsurprisingly, the association between green and white teas and all other styles is low (avg. 21%).
From this collection of 187 descriptors, I simplified this list to 126 – removing similar descriptors and those not describing flavors (e.g., astringent) – and categorized them according to overarching categories. Additional flavor descriptors (listed in italics on my chart) were then selected from the ITMA, Twinings, and SCAA “flavor wheels,” and the Court of Master Sommeliers’ deductive tasting chart. Their are 160 total aromas and flavors – spread across 23 minor categories – included in the chart.
