Tired of your usual boring rice preparation? Need something simple and different to cook up?
Try out my super fast (and yummy) version of flavoured rice.
400 gms Basmati rice, cleaned and washed twice (or any good quality long grain rice)
2 pieces fresh Cardamom (Elaichi) (slightly crushed)
1/2 inch piece of a Cinnamon stick (Dalchini)
2 pinches of Jamacian All Spice mix (Powder) (I recommend using “Naturesmith” Jamacian All spice mix)
2 cups water (should be proportionate to the cup used to measure the rice)
In a Pressure cooker, first add the washed rice, then the water and all the other ingredients.
Mix it up well and cook on a high flame till the first whistle goes off; then continue to cook the rice for about 10 minutes on a low flame.
Wait for the cooker to open on its own, don’t force it open. I prefer to take out all the spice pieces (after cooking, the spices tend to settle right on top of the rice, so this should be easy peasy!) Then mix up the rice evenly with a fork, and serve it hot !
TIPS: I find that this rice goes really well with a paneer gravy or a chicken gravy.
