OJT EATS | Flesh and Buns
One of the first of the recent wave of bao restaurants in London was Flesh and Buns in Covent Garden. Opening up in one of the basements of what is now the KERB Seven Dials, it takes a very non-traditional approach serving up DIY bao buns.
Before we get onto the buns, we had a few starters. First up was this platter of sushi. There was a mixture of sashimi, a sushi roll and a bowl of ceviche. Simple and fresh fish makes for a good start to the meal.
A plate of korean fried wings. Covered in a sticky spicy sour sauce with a sprinkle of sesame seeds. The wings had a nice crunch to them and the sauce was nice and tangy. I’m not usually a fan of saucey wings but these were good.
A bowl of really well fried squid. Crispy and light, this was a very well executed bit of frying!
Corn tempura. As you can see, the small plates (at least the ones we ordered) have a bit of a trend of all being deep fried. These were fairly chunky sized balls of corn off the cob and batter.
Here are the buns of “Flesh and Buns”. Not quite as soft as pillowy as I’d have liked but not too bad. You only get 2 per plate of flesh which honestly just isn’t enough but at least you can order more.
You see what I mean about 2 buns not being enough? I’m not sure how anyone is expected to fit all of this fried chicken into 2 buns. The fried chicken was really quite impressive. Not too oily and super crisp and juicy. The sauce it came with was also really more-ish.
Crispy piglet belly. A slab of belly pork with a crisp layer of skin with a mustard miso and pickled apple. This was our favourite with the crispiness of the pork skin working really well in the soft buns.
This wasn’t bad either. A thin cut rib eye steak with pickles and mushrooms. This was a little tough and had a bit of a teriyaki sweet glaze to it. The meat itself was maybe a little thinner cut that I would’ve liked but overall, still tasty enough to eat without a bun.
We figured we needed a little bit of vegetables so went for this tenderstem broccoli. It came with these little puffed rice things that were a nice touch as it was good to have a little bit of crunch.
Now onto dessert. This was a salted caramel chocolate fondant. You can’t see here but cut into it and you had warm chocolatey caramel ooze out in an amazing mess. Really nice and the matcha ice cream that it came with also went down a treat.
Lastly were these kinako doughnuts. These were filled with a black sugar custard that had a great molasses flavour to it. The doughnut itself was pretty tasty too.
All in all, this was a really nice meal. Service was good and the food was tasty, even though I will keep on about not having enough bao buns. End of the day, we thoroughly enjoyed the meal and would be more than happy to go back again!
