Ingredients: 1 cup fresh cranberries. 1 cup mini marshmallows. 1 cup crushed pineapple drained. 1 cup whipped topping like Cool Whip. 1/2 cup chopped pecans. 1/2 cup shredded coconut. 1/4 cup powdered sugar.
Instructions: In a food processor, pulse the cranberries until finely chopped. In a large mixing bowl, combine the chopped cranberries, mini marshmallows, crushed pineapple, whipped topping, chopped pecans, and shredded coconut. Gently fold in the powdered sugar to sweeten the mixture to your taste. Chill the salad in the refrigerator for at least 2 hours before serving. Serve chilled and garnish with additional cranberries or coconut flakes if desired.
