These Pumpkin Donuts are a delightful treat perfect for autumn. They are fluffy, spiced to perfection, and glazed to sweet perfection. Serve them with a cup of hot coffee or cider for a cozy snack.
Ingredients: 1 cup canned pumpkin puree. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1/4 cup unsalted butter, melted. 1 egg. 2 cups all-purpose flour. 2 tsp baking powder. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground ginger. 1/2 cup milk. 1 tsp vanilla extract. Vegetable oil, for frying. 1 cup powdered sugar. 2 tbsp milk. 1/2 tsp vanilla extract.
Instructions: Melted butter, brown sugar, granulated sugar, egg, and canned pumpkin puree should all be combined in a mixing bowl. Mix the flour, baking powder, salt, and spices ginger, nutmeg, cloves, and cinnamon in a separate bowl. Add the dry ingredients mixture to the pumpkin mixture gradually, starting and ending with the dry ingredients and alternating with the 1/2 cup of milk. Add 1 tsp of vanilla extract and stir. Preheat vegetable oil to 350F 175C in a deep fryer or large heavy pot. Pumpkin dough spoonfuls should be fried for two to three minutes on each side, or until golden brown, in the hot oil. Using a slotted spoon, remove the donuts and set them on a plate covered with paper towels to remove excess oil. To make the glaze, combine 1/2 tsp vanilla extract, 2 tbsp milk, and powdered sugar in a small bowl. Allowing any excess glaze to fall off, dip each donut into the glaze. Before serving, place the glazed donuts on a wire rack to cool for a few minutes. Savor your mouthwatering pumpkin doughnuts!
