These light and fluffy peach muffins are a delicious treat that are just the right amount of sweet and healthy from the fresh peaches. They taste like butter and are very soft. They are great for breakfast or as a snack.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, melted. 2/3 cup buttermilk. 2 large eggs. 1 tsp vanilla extract. 1 1/2 cups fresh or canned peach slices, chopped. 1/4 cup chopped pecans or walnuts optional. 1/4 cup powdered sugar for dusting. Cooking spray for greasing muffin tin.
Instructions: Preheat your oven to 350F 175C. Grease a muffin tin or line it with paper liners. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In a separate bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped peaches and chopped nuts if using. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, dust the muffins with powdered sugar before serving.
