On this 2 part episode of food porn I am working with a delicate meats (LAMB & SALMON). I let the lamb sit fresh in a bag of herbs for a couple days so the natural flavor of the herbs soak into the meat and start to eliminate the gamey taste for those who don't like gamey flavor. I then soaked it for 48 hours in a house made sauce and cover it in chives.
