The other day I had a huge craving for a snacky sort of dinner. You know, bread, cheese, meats, wine, a couple other picnicky/tapas-type dishes...delicious stuff. I perused all the usual sites and just couldn't get excited about anything, except this one recipe for Catalan Spinach. It looked super simple and I already had everything at home. Win!
I know, I know. This looks strangely similar to that broccoli rabe dish I made, and it also contains raisins. You know what? They weren't so horrible in this dish. Probably b/c they soaked up some savory flavors.
This is a super simple side dish and it went great with a tequila lime chicken breast.
Catalan-Style Spinach (adapted from Foolproof Living)
5-6 oz baby spinach
2 tbsp raisins
2 tbsp pine nuts, toasted
1 large shallot, chopped
1 clove garlic, minced
1 1/2 tsp olive oil
1/2 tsp sherry vinegar
salt & pepper to taste
Saute shallot in olive oil over medium high heat. Add spinach and cook until it starts to wilt. Add raisins and pine nuts and cook for 1-2 minutes. Add sherry vinegar, toss for 20 seconds and remove from heat. Season with salt and pepper to taste.
