Rosemary and Lemon Syrup.
(Recipe makes about 2 cups) Resin sprigs of Mary's Rose Which hold more thorns than flowers born And blend so well with syrup sweet From chalice wrought of Silverhorn Added bitter bound with heat And formed into this simple brew What was sown now we will reap From harvest dipped in morning dew Ingredients: 4 Rosemary Sprigs 3 tsps Dried Lemon Peel 2 Cups Sugar 1 Cup Water Juice of Half a Lemon Instruction: 1) Heat 1 cup of water, 2 cups of sugar, and the juice of half a lemon in a pot that has a tight fitting lid, stirring to dissolve sugar (do not boil) and remove from heat as soon as sugar is dissolved. 2) Add rosemary sprigs and dried lemon peel. Cover container and steep for 30 minutes to 1 hour. 3) Sterilize an air tight container by pouring boiling water into it (don't forget to pour some on the lid as well) removing the water just before putting the syrup into the container. 4)Strain into airtight (preferably glass) container and refrigerate for up to two to three weeks. Usages: Stimulating and uplifting the mind and its senses (rosemary is good for cognitive functions including memory, concentration, and focus.) Vitality, healthy, and beauty (both rosemary and lemon have strong ties to beauty remedies for hair and skin.) Combat colds (rosemary is excellent for chest congestion and lemon is wonderful for sore throats.) To Use: Brew favored tea blend in hot water, let steep, remove teabag, and add 1 spoonful (2-3 tsps) of syrup. Stir until dissolved. This can also be added to cocktails and mixed drinks. And is a great addition for sweetening iced tea in the summertime.
