I don’t believe in secrete recipes
here’s the most delicious foraged recipe I’ve ever created in my opinion.
Acorn pancakes
1 cup acorn flour (foraged or bought at a Korean market)
1/2 cup flour
2 tbs maple syrup maple syrup (real is best if you can access it)
1 tbs ground flax mixed with 1 tbs water, let congeal before adding to mixture.
1 tbs baking powder
2 tsp vanilla
1 tsp pumpkin spice mix
Add alternative milk until about the consistency of medium-thick cake batter, your starches moisture level will drastically change how much milk is needed.
Directions-
Mix the flours, add the milk, flax ‘egg’, vanilla, maple and spice until you have a lump free mixture, heat and grease the pan, just before cooking the batter add the baking powder and quickly mix that in.
You can sub the flax for egg and alternative milk for cows milk if you don’t want a vegan version, however I haven’t made it non vegan so I don’t know how it would turn out, however usually pancakes are pretty easy to make when you have milk and egg.
