Antique French Copper 2.5mm Daubiere or Oven Pan Dish Cast Bronze Handles Totally Hand Made Dark Tin Lining, Bent, Misshapen, Dented, No Lid This is a proper Coppersmith made, beautiful, 1700's or early 1800's Antique Daubiere or Oven Dish. Antique French Copper Daubiere or Oven Pan Bronze Handles Totally Hand Made Dark Tin Lining, Bent, Misshapen, Dented and absolutely fantastic. Antique French totally hand made daubiere or oven pan. This is very old and very well used, this could still be used for cooking now and it is incredibly decorative, I think the value in this is the age, patina and genuine beauty of the copper. There is missing tin so to be used for any cooking it needs to be re tinned. The patina is exceptional and it has many indentations, scrapes, scratches, bruises and faults all over this piece. It sits flat and the edge is sound. The handles are tight now have been like that for many generations. The tin is very dark and missing in places. But the colour, the richness of it can take your breath away. Running your fingertips across the copper you can feel the years of use and work this old dish has taken, it is a true relic of a French homestead and one you can own and wonder what stories it could tell. It is more than 150 years old and was made by a Coppersmith for a family to use on a daily basis. It has a castellated joint on the base and is totally hand hammered. The shape and manufacture of the handles shows it's age. This is a fabulous example of a totally hand made and raised daubiere by an Artisan Coppersmith It's a lovely old thing. It weighs 3.55 kilos and measures 33cm 13 inches across, is 19.5 cm or 7.75 cm wide and is 16cm or 6.25 inches high. This will be securely wrapped and posted via La Poste Colissimo tracked and insured parcel post.

This pan is the business - steel lined copper, chunky cast bronze handles secured with steel rivets - this pan is fit for purpose and is the work horse of the copper pan world.

This is a useful size that will do a casserole, beef borgingnon or cock au vin for four.

This weighs 1.8 kilos 3lbs 15.5 ozs for the pan and lid. It measures 24 cm across about 9.5 inches, 17 cm 6.75 inches wide and 10.5 cm or 4.125 inches deep.

This was used in a French provincial home and was used extensively, it has minimal wear on the steel lining. The outside has some surface wear and surface scratches on the base but it is all authentic wear and adds to the story of the pan. Heritage on your hob!

These sort of casseroles get passed down through generations as they are so useful and rarely come onto the market in this condition. This is a real treat for your kitchen! Beef bourguignon Ingredients 1.5kg/3lb5oz chuck beef or braising steak, cut into 5cm/2in pieces 3 tbsp olive oil 1 large carrot, peeled and cut into chunks 1 large onion, peeled and cut into chunks 2 sticks celery, rough chopped 2 bottles red burgundy wine 2 sprigs fresh thyme 1 head garlic, cut in half horizontally 4 bay leaves 50g/2oz unsalted butter 225g/8oz whole piece of smoked bacon or pancetta 450g/1lb shallots, peeled 2 tbsp plain flour 375g/12oz chestnut mushrooms 290ml/½ pint fresh beef stock 5 tbsp brandy freshly chopped flatleaf parsley

Preparation method Heat 1 tbsp of the oil in a large saucepan. Add the carrot, onion and celery and cook for 2-3 minutes. Add the wine, thyme, garlic and 2 bay leaves. Bring to the boil and simmer for 15 minutes. Allow to cool. Place the beef in a large bowl and pour over the wine marinade. Cover and place in the fridge overnight. This is known as a cook marinade. Preheat the oven to 150C/300F/Gas2. Drain the beef from the marinade into a colander over a glass bowl. Reserve the marinade and set aside. Heat 25g/1oz butter and 1 tbsp of the oil in a large frying pan. Add the bacon and cook until golden and brown. Add the shallots and transfer to a large casserole dish. Heat 1 tbsp oil in a large frying pan. Pat dry the cubes of beef from the marinade mixture using absorbent kitchen paper. Add half of the beef to the pan and cook until brown on all sides. Remove the beef and transfer to the casserole dish with the bacon, shallots and vegetables. Repeat with the remaining beef and add to the casserole dish. Stir in 2-3 large spoonfuls of the reserved marinade mixture to deglaze or remove any sediment from the pan. Pour into the casserole dish. Stir in the plain flour, the remaining marinade mixture and beef stock into the casserole dish. Bring to the boil, cover and place in the oven for 3-3½ hours or until the beef is very tender. Halfway through cooking, heat the remaining oil and butter in a large frying pan and cook the mushrooms until brown. Add the brandy and cook for a few minutes. Add the mushrooms to the casserole dish, stir and return to the oven the remaining cooking time. Serve with new potatoes, sprinkled with freshly chopped parsley and purple sprouting broccoli.

This was found in a domestic setting it has not been used at all. the stickers remain on the inside of the lid and the base. It is fully marked on the base and on the lid. This is a wonderful size that can be used in a domestic setting as well as in a professional one.

It is in remarkable condition it has surface scratches especially on the base, although minimal, the tin is totally in tact and can be used for cooking. The Brass/Bronzehandles look beautiful against the rich copper patina. The tray is as good quality as the outside - a real piece of beautiful design.
