Ingredients: 2 large fennel bulbs, sliced. 2 tablespoons olive oil. Salt and pepper to taste. Vegan Parmesan cheese, for sprinkling. 1 lemon, sliced. Fresh parsley, for garnish.
Instructions: Warm the grill up to a medium-high level. Add salt and pepper to the fennel slices after brushing them with olive oil. Fennel slices should be grilled for three to four minutes on each side, or until they are soft and have grill marks. Move the grilled fennel to a platter to serve. While the food is still hot, sprinkle it with vegan Parmesan cheese. You can add fresh parsley and lemon slices on top. Serve right away.
