This Creamy Corn Chowder is a comforting soup perfect for chilly days. It's packed with sweet corn, tender potatoes, and savory bacon in a rich, creamy broth.
Ingredients: 4 cups sweet corn kernels. 4 slices bacon, chopped. 1 onion, diced. 2 cloves garlic, minced. 3 cups chicken broth. 1 cup heavy cream. 2 potatoes, diced. 1 teaspoon thyme. Salt and pepper to taste. Chopped parsley for garnish.
Instructions: Over medium heat, cook the bacon in a big pot until it gets crispy. Take the bacon out of the pot and set it aside. Leave the fat in the pot. Put diced onion in the pot and cook for about 5 minutes, until it gets soft. Cut up some garlic and add it. Cook for one more minute. Add crushed sweet corn and potato chunks, then pour in chicken broth. Once the mixture starts to boil, lower the heat and let it cook for 15 to 20 minutes, until the potatoes are soft. Using an immersion blender, blend some of the soup until it's the consistency you want, but leave some corn and potato chunks in it. Add the heavy cream and thyme and mix them in. Add salt and pepper to taste. Let the flavors blend for another 5 minutes by simmering. Serve hot with chopped parsley and bits of crispy bacon on top. Have fun!
