Gluten free vegetarian Chinese food. Hot and sour soup, fried rice, fried mixed vegetables. With fried tofu for your vegetarian and beef for the meat eaters. All home made.

Peas, Carrots, and Pearl Onions with Tarragon Butter
Ingredients:
20g Butter
(about 4-6 onions) 75g Pearl Onions, blanched
(about 2 carrots) 200g A.P. Carrot, cut into batons
150g Peas, frozen
½ tsp. dried Tarragon
Salt
White pepper
Method:
- fill medium pot with water 3 quarters of the way, with salt
- tear Tupperware container, weigh butter
- weigh onions
- weigh carrots, 2 carrots (about) 200-225g
- remove N and S (top and tail) of onions, set aside
- peel carrots, cut to about three 2” pieces each, then cut into batons
- set up ice bath (half water, half ice) for shocking
- blanch from lightest colour veggies to darkest (end with green)
- blanch onions for 2 minutes
- peel and then cut the onions in half lengthwise
- blanch carrots for about a minute and a half
- blanch peas for about 30 seconds
*shock all vegetables after blanching
- turn stove top to medium with a medium-sized skillet
- melt butter on stove top (do not let brown), then add veggies and shake pan so that the veggies are lying flat
- add a pinch of salt and white pepper (add in stages)
- add tarragon to veggies once they are almost done
- serve on a warm plate
