My fav easy Mexican brunch recipe starts with Frontera's Double Roasted Tomato Salsa. You can use any brand or make your own. We love this. Pour it in a roasting pan, add eggs (try not to crack the yolk as I did), add fresh avocado. If you have black beans, add (fresh cooked or canned rinced). I love to add pan-fried plantains or bananas but didn't have any at home. You can top with shredded Mexican cheese and crumbled corn chips. Cover the pan to poach the eggs until done to your liking. Voila. It is delicious and hearty. My version here is lighter and less calorie intense. As Julia would say.
