Indulge in the classic flavor of red velvet in cookie form, made gluten-free for those with dietary restrictions. These soft and chewy cookies are topped with a decadent vanilla cream cheese icing for the perfect treat.
Ingredients: 1 cup gluten-free all-purpose flour. 1/4 cup unsweetened cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1 tablespoon red food coloring. 1/2 cup white chocolate chips. 1/2 cup chopped pecans or walnuts optional.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth. Add the egg, vanilla extract, and red food coloring to the butter mixture and beat until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Fold in the white chocolate chips and chopped pecans or walnuts, if using. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. While the cookies are cooling, prepare the vanilla cream cheese icing see separate instructions below. Once the cookies are completely cooled, spread a dollop of vanilla cream cheese icing on top of each cookie. Serve and enjoy!
