Ingredients: 1 cup strawberries, hulled and sliced. 1/4 cup lime juice. 1 tablespoon lime zest. 1/2 cup granulated sugar. 8 ounces cream cheese, softened. 1/2 cup Greek yogurt. 1/2 cup heavy cream. 1 teaspoon vanilla extract. 1/4 cup graham cracker crumbs. 8 popsicle sticks.
Instructions: In a blender, combine strawberries, lime juice, lime zest, and granulated sugar. Blend until smooth. In a large bowl, beat cream cheese until smooth. Add Greek yogurt, heavy cream, and vanilla extract. Beat until well combined and creamy. Pour the strawberry-lime mixture into the cream cheese mixture. Stir until fully incorporated. Sprinkle graham cracker crumbs into the bottom of each popsicle mold. Pour the cheesecake mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold. Freeze for at least 4 hours or until completely set. Once frozen, run the molds under warm water for a few seconds to loosen the popsicles. Serve immediately and enjoy!
