These Mixed Berry and Jasmine Tea Scones are a delightful combination of sweet berries and fragrant jasmine tea. They make for a perfect tea-time treat or a delicious breakfast option.
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, cold and cubed. 1/2 cup mixed berries blueberries, strawberries, raspberries. 2 tbsp dried jasmine tea leaves. 1/2 cup buttermilk. 1 tsp vanilla extract. 1 egg, beaten for egg wash. Extra sugar for sprinkling optional.
Instructions: Warm your oven up to 400F 200C and put parchment paper on a baking sheet. Put the flour, sugar, baking powder, baking soda, and salt in a bowl and mix them together. Mix the cold butter cubes into the dry ingredients. As you work the butter into the dry ingredients, either use a pastry cutter or your fingers to make it look like coarse crumbs. Add the dried jasmine tea leaves and mixed berries and mix them in. Add the buttermilk and vanilla extract to a different bowl and mix them together using a whisk. Add the buttermilk mixture to the dry ingredients and mix them gently until they are just mixed. It's okay if there are some lumps; don't mix it too much. Place the dough on a floured surface and knead it a few times to bring it all together. Make a circle out of the dough that is about 1 inch 2.5 cm thick. Cut scones out of the dough with a round cutter or a sharp knife. Leave some space between the scones when you put them on the baking sheet that has been prepared. Brush the scones with the egg wash, and if you want, sprinkle them with extra sugar. After the oven is hot, bake the scones for 15 to 18 minutes, or until they are golden brown and fully cooked. Once done, take it out of the oven and set it on a wire rack to cool down. Tea with this dish should be served warm. Have fun!
