French toast with blueberry compote 🍞🫐
Because sometimes you just want breakfast for dinner. I made it a complete one by also roasting up some potatoes and frying up a few strips of crispy bacon 🥓
Challah bread or Japanese milk bread are perfect for a good french toast. A few eggs, cinnamon, fresh nutmeg, vanilla extract, a bit of salt, and some cream or half and half is good. I cook mine on medium low on a big buttered cast iron griddle.
When I go grocery shopping I like to buy about eight to ten smallish yellow potatoes that I immediately boil when I get home and then put in the fridge. They’ll last the next 5 days or so and are easy to then cut up and throw in the oven with some olive oil and a bunch of salt.
If you’ve never made a compote it’s the easiest thing to do. Just heat up a saucepan, add a nice nob of butter to melt 2 or 3 tablespoons of sugar, then add your fruit. I’ve used strawberries which are amazing and diced apple with cinnamon and nutmeg which I’m also into. Crush some of the blueberries to get that juice out and add more juice from a whole lemon or a lime and cook on low for 15ish minutes. If you like it gooey make a slurry with a tablespoon of cornstarch or two and just enough hot water and dump it in when the starch is dissolved. Stir it good, turn off your heat, and as it cools it’ll thicken up nice. Dump it in a container and you’ll have it for days. As equally good on oatmeal or ice cream as it is on french toast. Yum! 🤤
