This easy cucumber sushi is perfect for kids, featuring fresh cucumbers wrapped in seasoned sushi rice and nori seaweed. It's a healthy and fun snack or meal option.
Ingredients: 2 cups sushi rice, cooked. 4 sheets nori seaweed. 2 small cucumbers, julienned. 2 tablespoons rice vinegar. 1 tablespoon sugar. 1/2 teaspoon salt. Soy sauce, for serving optional.
Instructions: To make sushi vinegar, mix rice vinegar, sugar, and salt in a small bowl until the sugar and salt are mostly gone. Leave a small edge at the top of the cooked sushi rice when you spread it out evenly on the nori sheets. Slice the cucumbers and put them down the middle of the rice. Use a bamboo mat or kitchen towel to help you roll the sushi up tight. With a sharp knife, cut each roll into pieces that are easy to eat. If you want, serve with soy sauce.
