Ingredients: 2 ripe pears, peeled and cored. 1 cup white wine. 1 cup water. 1/4 cup honey. 1/4 cup fresh lemon juice. 4 cups mixed greens. 1/2 cup crumbled blue cheese. 1/4 cup chopped toasted pecans. 1/4 cup pomegranate seeds. Salt and pepper to taste.
Instructions: Put the white wine, water, honey, and lemon juice in a saucepan. Bring to a low boil. Put in the pears and poach them for 15 to 20 minutes, until they are soft but not mushy. After taking them out of the liquid, let them cool. Cut the pears that have been poached into thin wedges. Mix the mixed greens, blue cheese, toasted pecans, and pomegranate seeds together in a large bowl. Put the sliced poached pears on top of the salad. Add some of the poaching liquid to the salad to dress it up. Add pepper and salt to taste. Serve and have fun!
