These tasty lasagna cups have all the flavors of regular lasagna but are easy to eat because they are bite-sized. This is a fun take on a classic dish that is great for parties.
Ingredients: 12 lasagna noodles. 1 cup ricotta cheese. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. 1 egg, beaten. 1 cup marinara sauce. 1/2 teaspoon garlic powder. 1/2 teaspoon dried oregano. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Preheat oven to 375F 190C. Cook lasagna noodles according to package instructions until al dente. Drain and set aside. In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, dried oregano, salt, and pepper. Mix well. Grease a muffin tin. Cut cooked lasagna noodles into thirds. Press each noodle piece into the muffin tin, forming a cup shape. Fill each lasagna cup with a spoonful of the cheese mixture, then top with marinara sauce. Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly. Garnish with fresh basil leaves before serving.
