A zesty and nourishing dish made with the flavors of lime, ginger, garlic, and chili, that is also Paleo-friendly. The salmon stays moist and the broccoli stays tender when it's steam-roasted inside a foil packet.
Ingredients: 2 salmon fillets. 2 cups broccoli florets. 2 cloves garlic, minced. 1-inch piece of fresh ginger, grated. 1 red chili pepper, finely chopped. 1 lime, juiced and zested. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Set the oven temperature to 400F 200C. To make a marinade, combine the olive oil, lime juice, zest, chopped chili pepper, grated ginger, and minced garlic in a small bowl. Arrange the broccoli florets and salmon fillets on a large piece of aluminum foil. Sprinkle them with salt and pepper and pour the marinade over them. To trap steam, fold the aluminum foil into a packet and seal it tightly. The packet should be put on a baking sheet. Roast for 20 to 25 minutes in a preheated oven, or until the broccoli is soft and the salmon flakes easily with a fork. Open the foil packet carefully, taking care not to step on the hot steam. Drizzle any leftover marinade over the salmon and broccoli before serving. Savor your succulent Paleo steam-roasted broccoli and salmon!
