This Kale Power Salad is a nutritious and delicious meal packed with vibrant vegetables, quinoa, and a flavorful Garlic Honey Sesame Dressing. It's a perfect choice for a wholesome and satisfying lunch or dinner.
Ingredients: 4 cups kale, chopped. 1 cup quinoa, cooked and cooled. 1/2 cup carrots, shredded. 1/2 cup red cabbage, thinly sliced. 1/4 cup red bell pepper, diced. 1/4 cup cucumber, diced. 1/4 cup edamame, cooked and shelled. 2 tablespoons sesame seeds. 1/4 cup almonds, sliced. 1/4 cup feta cheese, crumbled.
Instructions: Boil the quinoa and put it in a large salad bowl. Add the shredded carrots, thinly sliced red cabbage, diced red bell pepper, diced cucumber, and cooked edamame. Warm the sesame seeds in a small, dry pan over medium-low heat until they turn golden brown. Take it off the heat and set it aside. Get a small bowl and mix 3 tablespoons of olive oil, 2 tablespoons of honey, 2 cloves of minced garlic, 1 tablespoon of soy sauce, and 1 tablespoon of sesame oil. This will make the dressing. Pour the dressing over the salad and mix everything together until it's well covered. Toast the sesame seeds, slice the almonds, and sprinkle crumbled feta cheese on top of the salad.
