A flavorful and healthy seafood dish featuring spicy shrimp served with creamy cauliflower mash and garlicky kale. This recipe is easy to prepare and perfect for a quick weeknight dinner or a special occasion.
Ingredients: 1 lb shrimp, peeled and deveined. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. 1 head cauliflower, chopped into florets. 4 cups kale, chopped. 4 cloves garlic, minced. 1/4 cup grated Parmesan cheese. 1/2 cup chicken broth. 1 tablespoon butter.
Instructions: Get the oven ready by heating it up to 400F 200C. Add the shrimp to a bowl and mix in the olive oil, paprika, cayenne pepper, salt, and pepper. Do this until the shrimp are well covered. Place shrimp that has been seasoned on a baking sheet. Bake for 10 to 12 minutes, or until shrimp is fully cooked. In the meantime, steam the cauliflower florets until they are soft. Then, put them in a food processor. Salt and pepper the cauliflower, then add the Parmesan cheese and pulse it until it's smooth, like mashed potatoes. Stay warm. Put olive oil in a pan and heat it over medium-low heat. Add the minced garlic and cook until it smells good. Put chopped kale in the pan and cook for 5 to 7 minutes, until it softens. Add the chicken broth and cook until the kale is soft and the broth is almost gone. Add the butter and stir it in until it melts and coats the kale evenly. Along with the cauliflower mash, serve the spicy shrimp over it. Have fun!
