Ingredients: 1.5 lbs small potatoes, halved. 2 tablespoons olive oil. Salt and black pepper to taste. 1 cup fresh scallions, chopped. 1/2 cup fresh basil leaves. 1/4 cup toasted pine nuts. 2 cloves garlic, minced. 1/2 cup grated Parmesan cheese. 1/2 cup extra-virgin olive oil. 2 tablespoons lemon juice. 4 cups mixed greens. 1/4 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced.
Instructions: Preheat the grill to medium-high heat. In a large bowl, toss the halved potatoes with 2 tablespoons of olive oil, salt, and black pepper. Grill the potatoes for 15-20 minutes, turning occasionally, until they are tender and have grill marks. While the potatoes are grilling, prepare the scallion pesto.
