I tried something new in today’s bento: the GemWrap. They are fruit or vegetable-flavored wraps that are incredibly low in calories (the one pictured above was only 15 calories), and you would use them as a substitute for a tortilla when you make a wrap. Once you get past the notion that you are wrapping a sandwich with a fruit roll-up, they are surprisingly delicious! I found these little gems (no pun intended) at my local Wegman’s store, and they had three varieties to choose from: tomato, carrot, and mango chipotle. GemWraps are also sold on Amazon, and there are even more flavors to choose from there.
The wrap pictured above is made with a mango chipotle GemWrap. Inside is a spicy chicken salad, green leaf lettuce, and a little bit of tomato. This picture was taken last night, just after I prepared it. It got a little bit soft as it sat overnight - my guess is that the tomato pulp sort of disintegrated a part of the GemWrap. But it was still very tasty! The mango flavor was intense, and the “chipotle” part just made it a bit smokey. I have five more wraps in the package that I bought, so you will get to see some more GemWrap creations in the near future.
