Adult stay at WDW contemporary resort
Contemporary resort, concierge level July 15-19, 2015 My husband had a conference next to Disneyworld so we figured it was a perfect excuse to pop over and stay for a long weekend! We chose the Contemporary due to its great proximity and walking distance with Magic Kingdom and being right on The monorail to Epcot. We were just two adults, alone in Disney. Booked the concierge level as I love being able to roll out of bed and grab a coffee down the hall instead of fighting for a cup in the resorts food courts or standing in long lines at the coffee stops. Sadly the coffee at concierge was mostly cold, tried various times of day but never had much luck. Most the time the to go cups were missing, which cooled the coffee off even more. Arrival to contemporary was easy, we had a car and drove right over to the gate, showed our DL and headed to self park as valet is now a charge of $20 per day!! Wow! A short walk from the parking lot and we are greeted and shown upstairs to the concierge lounge, we are on 12 which is where the desk and lounge are located. Check in is quick and I mention my food allergy, which seems to not be I the record, despite filling out their form, emailing and chatting with the concierges ahead of time. I am promised some type of "safe" foods will be available for me. They are true to their word, and each time I ask I am provided with either a sugary donut or a muffins which I have to say are very unappealing, mostly because I do not regularly eat this type of food. One night I am given a delicious meat and veggie shish kabob that is great, but other than that. The same old donut or muffin. After viewing the regular breakfast though, the fare is not much better. A few chopped fruits, half a boiled egg, cereals and lots and lots of pastries! The cold coffee is always present and water and tea in a jug. A small fridge holds juice boxes and soda with some beers in the evening. The best thing is the wine and liquor times from 5-7 and 8-10. In the evening there is also offered some type of protein with cheeses and veggies. Things are going downhill around here!! Rooms: concierge rooms over look the vast atrium and monorail with sounds that echo and bounce into your room. The style is 60s modern with lots of browns and greens, dark furniture and glass. Dust covers our desk and tables, there ware two queen(??) beds and a sofa bed, plus small flat screened TV. Two small closets and a cube fridge and coffee maker singles. A safe, pack and play and iron with board are in closet. Extra bedding also for the sofa bed which we always grab the blanket as there seems to be very thin sheets only on the bed! We have a nice balcony which over looks the pool and water with two chairs and a small table. The bath consists of two sinks (no where to put your toiletries) no towel bar by the tub but it is full sized, shower head has a few different settings but none seem to really get you clean. Toilet is in a separate sliding door area, all which is frosted glass. I felt like I had landed straight in the 60s! Drapes have black out curtains which work well, noise for hallway and atrium goes all night. Wifi is non-existent, you can hook up but it works sporadically. No table inside room to sit at. Toiletries were sporadic as was housekeeping. One day we got shampoo and conditioner, two days later shampoo and lotion. Never got bath gel twice. We are early a.m. People, the maids would show up in our room about 3pm to clean, even though we were usually gone by 8am. We mentioned this a few times to concierges and to housekeeping, were promised our room would be cleaned earlier but it never was.one night we repeatedly asked and finally had housekeeping show up at 9pm! "Turn down" which consists of a tiny chocolate on your bed would come at 4pm right after the maids! Concierges were friendly but seemed overworked and busy most of the time. If they had time they would gladly help you but the stream of people at their desks was always deep and the ones taking care of the food were running. Child in adjoining room cried throughout their stay, children run up and down the halls from early morning until late at night. I know all of Disney is a family place but it seems they could do something to hold the inside room noise to a minimum. We enjoyed the close proximity to magic kingdom and the ease of the monorail but for the price we paid to stay in this resort hotel not sure if I would do it again. Come on Disney, I thought you were trying to entice adults to visit more!!

Omg, bought these and was all set for a yummy treat. Don't bother they are disgusting!!
Always in search of good tasting GF foods, I found these wraps online at Amazon while shopping for other items. So… I ordered them and today I made a sandwich with one. It took a few times to get it “right”! Ok, after a few attempts, I figured out that you need to moisten the entire wrap, then let it sit for 2-3 mins before you can actually chew it easily!! but after I figured this part out, they’re easy to handle! The taste is very mild with a slight heat, I would definitely use them for sandwiches. Can’t wait to try them as a burrito holder!

Everything's better with peanut butter #glutenfree
Today I was on a Becky Hommekie mood.. You know where you put on an apron and bake?? Well, I just don't do that much anymore and I am STILL craving that certain something...haven't found it yet. So, with this in mind off I went to bake some cookies. I first made these below: Pumpkin Snickerdoodles Ingredients Cookies: 2 tablespoons of cornstarch beaten with 2 tablespoons of water (for egg) 1/2 cup pumpkin puree 1/4 cup applesauce 1/2 tsp pure vanilla 2 cups flour (whole grain preferred. I used a gluten free flour home-ground blend) 3/4 cup granulated sweetener (the healthiest possible) 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp ground ginger 3/4 tsp baking soda 1/4 teaspoon baking powder 1/2 tsp salt (natural salt preferred) Cinnamon Coating: 1/2 cup granulated sweetener (as healthy as possible) 1 tsp cinnamon 1/4 tsp nutmeg Method 1. Preheat oven to 350 degrees. 2. Combine sweetener and spices for cinnamon coating and set aside. 3. Combine all wet ingredients is small bowl 4. Combine all dry ingredients in large bowl 5. Add dries to wets and mix ’til combined. Do not over mix. 6. Make balls of dough (I use a small cookie scoop for this process), roll into balls, drop in cinnamon sugar topping, and roll to coat. 7. Place on cookie sheet / baking stone (I love my stones) about 2 inches apart. Flatten a bit with your hand. 8. Bake in preheated oven for about 10 minutes, or until slightly golden brown. 9. Allow to cool about 5 minutes before removing from tray and placing on a cooling rack. I used GF rice flour and organic coconut palm sugar, I did not roll them in the topping BUT I did add some GF choc chips, yum!! Well I baked the first batch and shared them with DH while we sipped some afternoon boost of energy, also known as coffee...sometimes you just need it!! Anyway, they were ok, but not really..needed something! So of course my mind went immediately to peanut butter, yum. My all time fav food in the world! I asked DH of he thought they would be better with pb added and he said, of course. So off I went and mixed up a new batch with peanut butter, all natural and organic. Well. Yum, did that make a difference, I am now only making these with pb, just throw a cup or so in and you will be set!!! Yay, my tummy is one happy GFninja!, woo hoo!!
This has nothing to do with #GF living or #travel but this is my new ride...so just had to post!! <3 my #miniroadster
Tyson GF chicken nuggets
You may not know this about me, but I used to love, love, love chicken strips and nuggets. They were my go to food when I was in a hurry and didn't have time to cook, or I wanted a snack. Not necessarily the nuggets from places like Mcdonalds, cause I haven't eaten there in years...but the ones that Banquet and Tyson makes that you cook at home. I always felt happy when I had a bag in the freezer for my quick meal. Those with some ranch dressing, yum!! So needless to say whenever I see or hear of GF chicken nuggets I run buy some and try them. Disney World had them and I used to always eat their regular ones, and I tried the GF ones. They were not bad, but were greaser than I wanted and had an aftertaste. Bummer.... So then I heard Tyson came out with some, yay, I was a happy person. Ran over to the local grocery and grabbed a bag and home again in anticipation. Today was one of those days, I wanted something....a nugget or two. So I warmed up a few in my microwave, mixed up some ranch dressing and prepared my mouth for a treat...sad to say they do not live up to my expectations. The first bite was ok but then a squirt of grease followed, blech...I forged ahead with a few more bites, no good :( I'm sorry to report that these also have a funny, after taste, almost like you're eating a not-cooked corn muffin...my tongue felt coated and they just weren't right. The chicken inside seemed good, a whole piece of bite sized white meat. So I peeled off the outside and just ate the rest naked. Sigh...I guess I will keep looking......
