Zucchini Pasta Marinara Ingredients: 2-3 zucchini 1-2 C pasta/marinara sauce 1 large tomato (diced) 4-5 Large cloves of garlic (chopped coarse) 2 TB of coconut or palm or olive oil salt and pepper to taste Directions: 1. Cut zucchini into thin ribbons with a very sharp knife or slicer (I’ve used both) 2. Warm oil in a large frying pan on medium high and add garlic stirring until lightly brown. 3. Add diced tomatoes and zucchini into pan astir in with garlic and reduce heat to low/medium for 10 minutes. 4. Add marinara sauce and simmer for 5 more minutes of until zucchini is almost translucent. Serve as a side or with meat balls or ground meat or turkey for a truly Italian grain free experience!
