Ingredients: 1/2 cup Chopped onions 1 cup chopped spinach 1/2 cup chopped mushrooms 1 1/2 cup chopped grilled chicken Egg whites or (6) regular scrambled eggs (macros calculated using egg whites only) Black pepper, Mrs Dash seasoning, your favorite spices *Combine veggies and chicken in a bowl and mix well. *(optional, saute' the veggies then add chicken.) * Place an equal amount of veggie/chicken mixture into the muffin pan using a cookie dough scoop. *Pour the eggs over the mixture in the muffin pan. Bake for 20-25 minutes or until the eggs are completely done. Serves 6 Macros info 20.5 P 2.5 C 1.5 F *Adjust the macros if you add cheese!* **Optional if you add cheese: Bake for 15-18 minutes then add your choice of shredded cheese and bake again for 5-8 minutes or until the cheese is melted. . .
