Gingerbread Muffins Ingredients: 2 Cups Flour
1 1/2 TSP Baking Soda 1/2 TSP Salt 1/2 Cup Sugar (Plus 1-2 TBS for sprinkling on top) 1 TBS Ginger 1 TSP Cinnamon 1/8 TSP Cinnamon 1 Cup Milk (I used Almond Milk) 1/3 Cup Oil 1/4 Cup Molasses 1 TBS Vinegar 1/2 TSP Vanilla Extract Bonus, but not necessary: 1-2 TBS Chopped Crystallized Ginger (to sprinkle on top) Drizzle Icing- 1 cup powdered sugar, 1/8 TSP Ginger, pinch of Cinnamon, pinch of Cloves, add a drip of milk at a time until the mixture is gooey but not runny Combine in large mixing bowl: Flour, Baking Soda, Salt, Sugar, Ginger, Cinnamon. Create a well in the dry ingredients and add the wet ones. Mix until combined, but don’t over mix. Pour into baking cups until about 3/4 full.
Sprinkle sugar and crystallized ginger on top.
Bake at 375 for about 20 minutes or until a toothpick inserted in the center of the muffins comes out clean.
Move to a cooling rack, allow to cool at least 10 minutes before drizzling with icing.
