Ingredients: 1 lb shrimp, peeled and deveined. 8 oz rice noodles. 2 tablespoons sesame oil. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon honey. 1 tablespoon fresh ginger, minced. 2 cloves garlic, minced. 1 red bell pepper, thinly sliced. 1 cup snap peas, trimmed. 2 green onions, thinly sliced. 2 tablespoons sesame seeds, for garnish. Salt and pepper, to taste.
Instructions: Cook rice noodles according to package instructions, then drain and set aside. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, ginger, and garlic to make the sauce. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from skillet and set aside. In the same skillet, add bell pepper and snap peas. Cook for 2-3 minutes until slightly tender. Add cooked noodles and shrimp back to the skillet. Pour the sauce over the top and toss everything together until well coated and heated through.
