Ingredients: 2 lbs boneless chicken thighs. 1/4 cup Mama Mayorga Achiote Marinade. 2 cloves garlic, minced. 1 lime, juiced. 1 tsp ground cumin. 1 tsp smoked paprika. 1/2 tsp salt. 1/4 tsp black pepper. 8 small corn tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped fresh cilantro. 1/2 cup crumbled queso fresco. Lime wedges for garnish.
Instructions: Put minced garlic, lime juice, ground cumin, smoked paprika, salt, and black pepper in a large bowl. Add the Mama Mayorga Achiote Marinade. Coat the boneless chicken thighs all over with the marinade after adding them. For the best taste, cover and put in the fridge for at least 30 minutes and up to 2 hours. Warm up your grill or grill pan over medium-high heat. To keep them from sticking, oil the grates. The chicken thighs should be grilled for 6 to 8 minutes on each side, or until they are cooked all the way through and have nice grill marks. Check to see if the temperature inside reaches 74F 165C. Lightly char the corn tortillas on each side for 20 to 30 seconds on each side while the chicken cooks. Make sure they are soft. Take the chicken off the grill when it's done and let it rest for a few minutes. Then cut it into strips. Put a few pieces of grilled chicken on each corn tortilla to make the tacos. Shred lettuce, diced tomatoes, diced red onion, chopped cilantro, and crumbled queso fresco then put on top. Add lime wedges to the tacos to make them look nice.
