This Damson and Gin Jam combines the sweet-tart flavor of damson plums with the aromatic essence of gin. It's a perfect condiment to elevate your breakfast or dessert.
Ingredients: 1 kg fresh damson plums. 600 grams granulated sugar. 150 ml gin. Juice of 1 lemon. Zest of 1 lemon. 1 tsp pectin optional, for extra thickening.
Instructions: Prunes should be cleaned and pitted. Divide them into quarters or halves, depending on how big they are. The damson plums, granulated sugar, lemon juice, and zest should all be combined in a large saucepan. Stir the sugar in the saucepan over low heat until it dissolves. Elevate the temperature to medium and gently boil the mixture. Simmer for 20 to 30 minutes, stirring from time to time. Add the pectin now and stir thoroughly if using. Take the jam off the stove and stir in the gin once it has thickened and reached the right consistency. After sterilizing the jars, fill them with the hot jam, leaving a little space at the top. Tightly seal the jars. Before storing the jam in a cool, dark location, let it cool completely. Savor your homemade Damson and Gin Jam with scones, toast, or as a delicious dessert topping!
