Ingredients: 1 lb thinly sliced ribeye steak. 1 large onion, thinly sliced. 1 large bell pepper, thinly sliced. 8 slices dairy-free provolone cheese. 2 tbsp olive oil. Salt and pepper to taste. 4 grain-free sub rolls.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add sliced onions and bell peppers, saut until softened and slightly caramelized, about 5-7 minutes. Remove from skillet and set aside. In the same skillet, add more olive oil if needed. Add the thinly sliced ribeye steak and season with salt and pepper. Cook until steak is browned and cooked through, about 2-3 minutes. Return the cooked onions and bell peppers to the skillet with the steak, toss to combine. Divide the steak mixture evenly among the grain-free sub rolls. Top each sub with 2 slices of dairy-free provolone cheese.
