These Paleo-friendly Green Goddess Pesto and Goat Cheese Bites are a delightful and fresh appetizer that's perfect for any occasion. The creamy goat cheese pairs perfectly with the herby pesto and crisp cucumber slices.
Ingredients: 1 cup fresh basil leaves. 1/2 cup fresh parsley leaves. 1/4 cup fresh chives. 1/4 cup extra-virgin olive oil. 2 cloves garlic, minced. 1/4 cup pine nuts. Salt and pepper to taste. 4 oz goat cheese, sliced into rounds. 1 cucumber, thinly sliced into rounds.
Instructions: Put the pine nuts, garlic, chives, parsley, and basil in a food processor. The ingredients should be chopped finely after pulsing. Olive oil should be added gradually while the food processor is operating, until the mixture resembles a smooth pesto. Add salt and pepper to taste when preparing the pesto. Arrange the cucumber slices as the foundation on a serving platter. Add a circle of goat cheese to the top of each cucumber slice. Place a tiny dollop of Green Goddess pesto over the goat cheese. If desired, garnish with more fresh herbs. Enjoy and serve right away!
