Joys and Frustrations
It’s been a while since I don’t blog. Many things have happened. I cheated on the diet a couple of days when my daughter came to visit. In my zeal to cook some of her favorite dishes, I caved in and had meat. I didn’t feel good afterwards; both emotionally and physically. I think my body is getting used to the diet. However, those couple of days aside, I’m doing great! Energy levels are great. I actually love the food, and have found some great additions to the diet such as “veggie burgers”. Loving the quinoa veggie patty! Another joyous event in the items found to eat has been making vegan pizza!!! Found great flat bread, and vegan mozzarella style cheese. I love the cheese’s silkiness. And the pizza tastes great! Great win.
The reactions of loved ones to my lifestyle change has been interesting. I still have had to convince my father that I’m not starving myself, and am eating well. A close friend was sort of annoyed because now he has to think about where to go for lunch with me once in a while. He keeps telling me to please let him know when I go back to eating meat. My daughter, on the other side, is supporting me.
I did make some changes to the diet. Thought I could go full fledged vegan, but that’s not going to happen. Aside from deciding to exclude all dairy, I decided to eat eggs once in a while. I found organic vegetarian raised chicken eggs and am getting those. I am also eating wild caught fish. As a Puerto Rican, fish is a huge part of my diet. I come from a family of fishermen, so you can imagine.
And to finish with a joyous remark... I’m losing weight! Tried on a dress for Sunday which used to fit nicely, and it looks huge on me! Also, had to donate some jeans which are actually falling off as I walk! I’m in this for life!

Spicy cauliflour sushi! 🍣🍣 My favorite dudhi used to be any that had spicy crab. This version with cauli instead of crab is genious. 🔸cut the cauli extra fine, steam it in the microwave for about a minute then toss with vegan mayo, siracha, rice vinegar and green onions. 🔸filed my rolls with the spicy cauli and shredded carrots and spinach. Topped with sesame seeds. 🔸today I tried a sweet chili, teriyaki and soy sauce for dipping. Amazing. 🔸 PS: I normaly steam the cauli but this time I was so hungry I forgot and added it raw 😂 I think I liked it better like this way, the texture was really great. 👌 #goingveggie #vegan #sushi
✨Cauliflour Parm for lunch😛💪. ✨Breaded in rice flour tempura (flour, baking powder, garlic powder, salt and cumin) and baked, then topped with marinara, smoked gouda and a bit of parmesan. PERFECT 💃 #goingveggie
🌶Inspiration from last summer in Mexico🌶 Had the most delicious Mexican meal served IN A CAVE after an underground river excursion and it looked a lot like this 😛. 🔅Mexican style rice with a spicy refried bean sauce and white corn tortillas. 🔅Made quick by using leftovers from this week. Leftover rice mixed with vegetables an spices, pureed yesterday's stewed beans and added chile paste while re-frying and lastly fresh home-made tortillas. All topped with lime juice. All completely vegan, low oil (only for cooking the beans) and delicious. #goingveggie #vegan
✨✨Mexican Tostadas for breakfast✨✨ Experimenting with garbanzo flour: garbanzo flour and very little water at a time to form a hard, barely sticky dough and cooked dry in a pan. Topped with smashed beans from yesterday, smoked gouda, thin onions, sour cream and cilantro. Soo good!✨ Ps: dough is a bit dry so make sure to make very thin tortillas and top generously. ✨ #goingveggie #goinghealthy
