Ingredients: 4 large potatoes, thinly sliced. 2 tablespoons olive oil. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. 1/4 cup gluten-free all-purpose flour. 1/4 cup almond milk. 1/4 cup nutritional yeast. Fresh parsley for garnish.
Instructions: Preheat the oven to 375F 190C. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add onions and garlic, cook until softened, about 5 minutes. In a bowl, mix sliced potatoes with remaining olive oil, dried thyme, salt, and pepper. Layer the sliced potatoes in a circular pattern on a lined baking sheet, slightly overlapping each other to form a galette. Sprinkle the cooked onion and garlic mixture over the potatoes.
