Ingredients: 8 chicken drumsticks. 1/4 cup green curry paste. 1 can 14 oz full-fat coconut milk. 2 cups baby spinach leaves.
Instructions: Preheat the oven to 400F 200C. In a bowl, mix together the green curry paste and coconut milk until well combined. Place the chicken drumsticks in a baking dish and pour the curry-coconut mixture over them, ensuring they are fully coated. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165F 75C. During the last 10 minutes of cooking, add the baby spinach leaves to the baking dish, allowing them to wilt in the curry sauce. Once cooked, remove from the oven and let it rest for a few minutes before serving. Serve the green curry drumsticks with a side of cauliflower rice or roasted vegetables.
