Quick and easy gluten-free snacks are little blueberries covered in yogurt that taste sweet and are good for you.
Ingredients: 1 cup blueberries, fresh or frozen. 1 cup Greek yogurt, plain or flavored ensure gluten-free. 1 tablespoon honey or maple syrup optional.
Instructions: Line a baking sheet with parchment paper. In a small bowl, mix yogurt with honey or maple syrup if using. Using a toothpick or skewer, dip each blueberry into the yogurt mixture, coating it completely. Place the yogurt-covered blueberries on the prepared baking sheet. Once all blueberries are coated, place the baking sheet in the freezer for at least 2 hours or until the yogurt is frozen. Once frozen, transfer the blueberry yogurt bites to an airtight container or freezer bag for storage. Serve immediately as a frozen treat or snack straight from the freezer.
