These delicious lime tartelettes with blueberries are a tangy and refreshing treat that's great for any event. The tart lime filling goes well with the sweet condensed milk and the fresh blueberries, all of which are surrounded by a buttery graham cracker crust.
Ingredients: 1 1/2 cups graham cracker crumbs. 1/4 cup granulated sugar. 6 tablespoons unsalted butter, melted. 3/4 cup fresh lime juice. 2 tablespoons lime zest. 1 can 14 ounces sweetened condensed milk. 1 cup fresh blueberries. Whipped cream for topping optional. Extra lime zest for garnish optional.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottoms and up the sides of mini tart pans. Bake the tart shells for 8-10 minutes until lightly golden. Let them cool completely. In another bowl, whisk together lime juice, lime zest, and sweetened condensed milk until smooth. Fill each tart shell with the lime mixture. Top each tartlette with fresh blueberries. Chill the tarts in the refrigerator for at least 2 hours. Before serving, optionally garnish with whipped cream and extra lime zest.
