Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup coconut oil, melted. 1/4 cup honey or maple syrup. 1 tsp vanilla extract. 1/2 tsp baking soda. Pinch of salt.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine almond flour, coconut flour, baking soda, and a pinch of salt. In a separate bowl, mix melted coconut oil, honey or maple syrup, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until a dough forms. Roll the dough into a ball and place it between two sheets of parchment paper. Roll it out to about 1/8-inch thickness. Use a small circular cookie cutter or the mouth of a glass to cut out small wafers. Place the wafers on a baking sheet lined with parchment paper. Bake for 8-10 minutes or until the edges start to turn golden brown. Remove from the oven and let cool completely on a wire rack. They will crisp up as they cool.
