These cupcakes are a fun take on the classic Grasshopper Cookie because they combine chocolate and mint flavors in a cupcake shape. They're great for any event and will satisfy your sweet tooth.
Ingredients: 1 and 1/2 cups all-purpose flour. 1 cup granulated sugar. 1/2 cup unsweetened cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 2/3 cup buttermilk. 1/2 cup vegetable oil. 2 large eggs. 1 tsp vanilla extract. 1/2 cup hot water. 1/2 cup chocolate chips. 1/4 cup chopped mint chocolate or Andes candies.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined. Stir in the hot water until the batter is smooth. Be careful as the batter will be thin. Fold in the chocolate chips and chopped mint chocolate or Andes candies. Fill each cupcake liner 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Once the cupcakes are completely cooled, you can frost them with your favorite mint-flavored frosting and decorate with additional chopped mint chocolate or Andes candies.
