Enjoy a tasty breakfast with these Strawberries and Cream Pancakes. Some fresh strawberries and sweet whipped cream on top of fluffy pancakes make for a great breakfast treat.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. 1 cup fresh strawberries, sliced. 1/2 cup heavy cream. 2 tablespoons powdered sugar. 1/2 teaspoon vanilla extract.
Instructions: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Place sliced strawberries on top of each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
