These Green Goddess Enchiladas are a tasty and healthy take on traditional enchiladas. They are topped with a zesty green enchilada sauce and filled with a flavorful mixture of black beans, corn, veggies, and cheese.
Ingredients: 2 cups cooked black beans. 1 cup corn kernels. 1 cup diced bell peppers. 1 cup chopped spinach. 1 cup shredded Monterey Jack cheese. 1/2 cup diced onions. 1/4 cup chopped cilantro. 1/4 cup green salsa. 8 small flour tortillas. 1 cup green enchilada sauce.
Instructions: Set the oven's temperature to 375F 190C. Black beans, corn, bell peppers, spinach, cheese, onions, cilantro, and green salsa should all be combined in a big mixing bowl. To make the tortillas pliable, microwave them for 20 seconds. Top each tortilla with a heaping tablespoon of the bean mixture, then tightly roll them up. Place the filled tortillas, seam side down, in a baking dish. Once the tortillas are rolled, cover them evenly with the green enchilada sauce. If you'd like, add more cheese on top. Bake for 20 to 25 minutes in a preheated oven, or until the cheese is bubbling and melted and the enchiladas are thoroughly heated. Before serving, take it out of the oven and allow it to cool for a few minutes. Add more cilantro as a garnish, and serve with green salsa on the side.
