Indulge in the rich and tangy flavors of blue cheese with this delicious grilled cheese sandwich. Caramelized red onions and mozzarella cheese complement the blue cheese for a gourmet twist on a classic favorite.
Ingredients: 2 slices of sourdough bread. 2 tablespoons of butter. 2 ounces of blue cheese. 1/4 cup of shredded mozzarella cheese. 1/4 cup of sliced red onions. 1 tablespoon of olive oil.
Instructions: Heat a skillet over medium heat and add the olive oil. Saut the sliced red onions until they become soft and caramelized, about 5 minutes. Remove them from the skillet and set aside. Spread butter on one side of each slice of sourdough bread. Place one slice of bread, buttered side down, in the skillet. Crumble the blue cheese evenly over the bread in the skillet. Add the caramelized red onions on top of the blue cheese. Sprinkle the shredded mozzarella cheese over the onions. Top with the second slice of sourdough bread, buttered side up. Grill the sandwich for about 2-3 minutes on each side, or until the bread is golden brown and the cheeses are melted. Remove the sandwich from the skillet and let it cool for a minute before slicing and serving.
