A delightful twist on a classic quesadilla, these Grilled Cheese Crepes are filled with the goodness of Swiss chard, dill, and two types of cheese. They're crispy on the outside and gooey on the inside, making them a perfect savory treat.
Ingredients: 2 large crepes. 1 cup shredded cheddar cheese. 1 cup chopped Swiss chard. 2 tablespoons fresh dill, chopped. 2 tablespoons butter. Salt and pepper to taste.
Instructions: Place the crepes on a clean surface. Spread half of the cheddar cheese shreds out on one side of each crepe. Spread the chopped Swiss chard and fresh dill out evenly on top of each crepe's cheese. Add the rest of the cheddar cheese on top of the chard and dill mix. Add a little salt and pepper to taste. Cover the cheese and filling with the other half of the crepe. Put the butter in a nonstick skillet that is hot over medium heat. Put the folded crepes in the pan after the butter has melted. As soon as the crepes turn golden brown and the cheese melts, flip them over and cook for another two to three minutes. Take the crepes out of the pan and let them cool for one minute.
