This is a simple and tasty slow cooker apricot chicken recipe that is sweet and savory and great for a comforting meal.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup apricot preserves. 1/4 cup soy sauce. 2 cloves garlic, minced. 1 tablespoon ginger, grated. 1/4 teaspoon red pepper flakes. 1/4 cup chicken broth. Salt and pepper to taste. 2 tablespoons cornstarch. 2 tablespoons water. Green onions, sliced for garnish. Cooked rice or quinoa for serving.
Instructions: Put chicken breasts in the crock pot. Put soy sauce, garlic, ginger, red pepper flakes, chicken broth, salt, and pepper in a bowl and mix them together. Put the mix on top of the chicken. Keep the lid on and set the heat to low. Cook for 4 to 6 hours, or until the chicken is soft and fully cooked. Take the chicken out of the slow cooker when it's done cooking and shred it with two forks. Put the chicken shreds back into the slow cooker. To make a slurry, mix cornstarch and water in a small bowl. Cover the slow cooker and add the slurry. Stir it around well. Put the lid on top and cook on high for another 30 minutes, or until the sauce gets thicker. Add sliced green onions on top of the cooked rice or quinoa and serve the apricot chicken. Have fun!
