Ingredients: 2 boneless, skinless chicken breasts. 2 lemons, juiced and zested. 2 tablespoons olive oil. Salt and pepper to taste. 4 cups mixed greens e.g., lettuce, spinach, arugula. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup fresh basil leaves, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup balsamic vinaigrette dressing.
Instructions: In a bowl, combine the lemon juice, lemon zest, olive oil, salt, and pepper. Mix well to create a marinade. Place the chicken breasts in a zip-top bag and pour half of the marinade over them. Seal the bag and refrigerate for 30 minutes to marinate.
